scrambled eggs with artichokes & ham

I’m sorry the blog is quiet. we’re having a bit of work done on the house which means everything is in the wrong place, very dusty and a little bit dirty.

This has coincided with a determined blitz on the freezer, so I could defrost it before the new carpet goes down, which means we’ve had lots of freezer meals – my much-loved lentil and mushroom ragu, chilli with tortillas and all the accompaniments, mustardy mackerel fish cakes as praised by gordon ramsay – and the rest of the time I’ve largely been sticking to quick and easy options that haven’t inspired me to sit down and write about them.

However, things will be getting back to normal later this week and I do have a lot of things I want to share with you, not least the results of my damson weekend.

In the meantime, let me share this Moro-style scrambled eggs with artichokes and parma ham. It is a version that they suggest as an alternative to the top ten scrambled eggs with prawns and asparagus. It’s much richer (I used artichokes which had been marinated in oil which would have contributed to this) but again was a nice weekend breakfast treat - the browned garlic and hint of chilli really lift into the land of something special. Perfect as a distraction from the muck and mundanities of daily life.
