jersey royal potatoes: spanish style or in a salad

my interest in eating jersey royals in the simplest possible style always moves on quite quickly and i soon start thinking about using them in different ways.

recently, i scrubbed some royals, tossed them in olive oil and spanish smoked paprika before roasting them with chicken thighs (which had slices of chorizo pushed under their skin to give them a hint of spanish flavour). the leftovers of these spanish potatoes were particularly good when reheated by being fried in a nonstick pan with a little olive oil to crisp up the edges.

the pictured salad was also delicious and very quick to pull together: the jersey royals were boiled until just cooked then tossed, while still warm, with a dressing of olive oil, lemon juice, crushed garlic and wholegrain mustard. i added pieces of cooked asparagus and a handful of chopped fresh mint and then arranged the potatoes in a bowl with slices of parma ham. delicious with a green salad on the side.
